Malty, you may never find a wheat beer you like, but there are so many different ones out there. Try the Weihenstephaner or Schneider lineups from Germany, you'll get a wide variety of wheat beers. Boulevard wheat is a great one, or brew your own. Ferment cool for a clove flavor, warm for more bananas in the taste.

That's a fact I didn't know. I thought banana and clove was always prevalent when brewing a wheat beer. How much clove still shows up at the lower end? I may have to try this in a small batch.

I've also been meaning to try Weihenstephaner for a while, I'll be sure to give it a go. Have you had Dark Truth by Boulevard? It's also on my "to hit" list.

I'm not a big Imperial anything fan but Dark truth is pretty good once in a while, I have a couple of them set aside.
I ferment my hefeweizen with the Weihenstephener yeast from White Labs at 62F or less fermentation temp for that clean clove flavor. I've had hefe's in Germany that tasted like a banana milkshake and that's not bad, I just like the clove flavor.
