...I just got back from the brew shop with my next kit, and noticed that there was a packet of enzymes together with the yeast packet under the lid. I've never seen this before, does anyone know what effect that has on the beer?

The enzymes are just a yeast energizer to give it a little help in kicking off.
Make sure to do a starter with the dry yeast.

yep, a starter will really help the yeast take off, however, if you don't , then you will still get good beer. yeast require nutrients besides just sugars.

sorry for my ignorance, but what does "doing a starter" mean??? I'm still fairly new to the whole homebrewing thing!
