I have the temp control wired up and the freezer connected to it. i plugged it up last night aqnd put the Set Point (SP) to 37F, the only thing is that it goes all the way down to 29F before it shuts off. Is there something else i need to change to make it shut off sooner? What's the best way to make it stay a constant 37-38F?

sounds like you have it wired backwards, it should shut off at 37 and turn back on at 40, depending on your differential, but either way, it should shut off at 37, not turn on. take a look at your wiring diagram, it will show a "normally open" and "normally closed", whichever you have it wired to is incorrect. (i'm at work and don't have my instructions in front of me, but I use both NO and NC, one for the freezer in the summer, and the other for the heater in the winter...

should i set my diff to 3 and my set point to 37f or should it be lower?

I agree with Danno's assessment. I think you have it backwards.
This (http://www.zymico.com/thermostat.shtml) wiring diagram is how I have mine set up.
If you set the point at 40 and the dif at 3, that means it'll turn on at 40 and off at 37.
(FWIW, I keep mine at 38 with a dif of 3.)

i checked it and its wired right, i had my set point at 37f and the diff is factory at 10, i think, so that would mean it would turn on at 37 and turn off at 27, right? does it matter which wires coming out of the temp sensor go into which holes?

Are you testing it with the freezer empty? If so, the temps will move a lot more than if it has some beer in it. With just air, there is no thermal mass so the cooling cools (which get to about -10 degrees) won't shut off until the air is at 37. But there is enough cold left in them for the air to continue to cool down to 27.
Load a couple of cornies in there and the residual cool in the coils won't drop the temp more than 1 or 2 degrees once the compressor shuts off.
Make sure you mount your temp pickup midway between the cooling coils (usually at the bottom and sides) and the top. Too close to the coils and it will cycle too much and too close to the top and it will cool beyond your set temp before shutting off.
