hey all was just thinking about a Beer Cheese fondue. Did a little searching on google but the stuff thats coming up is really generic and not much focus on the beer or beer type to use. wondering if anyone has a recipe that they wouldn't mind posting on here.

A lot of brewpubs do a good beer cheese soup. I'd like to see some recipes for that as well.

A belgian wheat (or most wheats for that matter) might be good. A cheese fondue normally gets a bit of sweetness from white wine so it may be a bit bitter with beer. A bond ale or kolsch might work too. Just a couple of guesses...

Beer can be used in most recipes where wine would be appropriate. Use heavy beers and stouts for those recipes that would normally take red wine; use a light ale or similar to replace white wine.

Steak and kidney pies and puddings are commonly made with beer in English pubs, and we will be having at least one meal of that type at the Wordcraft Convention in October.

I think I saw Alton Brown make a beer cheese soup on "Good Eats" recently...not sure, though. I've never made it, or fondue, but I imagine it's pretty simple.

He also made a fondue using beer, and related a story that if I remember correctly states that fondue was created during the hundred years war by the opposing sides coming together to eat.

a woman in our club made a beer cheese fondue using Spaten hefeweizen and a white-ish cheese. she served it with, of course, beer bread. it won our clubs little competition for appetizers made with beer.

looks good. I may make it there this weekend, we are going to dogfish head and then swinging back home, was hoping to hit victory but they aren't open early enough, so we're still makin up plans.



Abbey Dubbel Cheese Fondue

Fondue is very good with white wine, however, we prefer it with Flying Fish Abbey Dubbel - it just gives it that extra something special!

1/2 pound imported Swiss cheese, shredded
1/2 pound Gruyere cheese, shredded
2 tablespoons cornstarch
1 garlic clove, peeled
1 cup Flying Fish Belgian Abbey Dubbel
1 tablespoon lemon juice
Pinch nutmeg

Sprinkle cornstarch over cheese and mix together so all cheese is coated with cornstarch. Cut the garlic clove in half and rub the inside of a heavy non-stick saucepan.

Add the Abbey Dubbel and lemon juice to the saucepan and simmer over low flame. Once liquid simmers, slowly add the cheese; stir as you go. Once all the cheese is stirred in and melted, add a pinch of nutmeg, stir to mix.

Pour melted cheese into fondue pot and keep warm.

Our favorite items to dip into fondue:

* Cubes of french bread
* Broccoli or cauliflower florets
* Grilled italian sausage
* Apples
* Asparagus
* Steamed potatoes
* Steamed string beans

The comments about Alton Brown (I love Good Eats) made me think to look at the Foodnetwork site. I found this recipe for Beer Cheese Fondue.
