This may be a silly question, and it may've been asked already, but what's a good gauge when it comes to the age of a beer? When does beer go bad? I've got a bottle (750ml) of Affligem dubbel that's got a freshness date of 28-02-03--is it too far gone?

Fancy meeting you here. Guess the BAs that advised just opening it didn't give you the answers you wanted? There really is no other way to find out....with any beer....aged or fresh from the brewery. Drink up.

Need first hand knowledge? Unibroue dates all their beer, yet they do so only as a guide and feel many of their beers can far exceed their best by dates, due to bottle conditioning and the potency of many of their beers. After having had many Unibroue's, months to 1+ year past their best by date (as well as a few Belgian beers like Corsendonk), some beers will survive...some won't. Crack your Affligem and drink it. It's not getting any younger...
