I have been reading a lot about lag time and had a question. As a general rule when is the lag time measured? First bubbling? Formation of Krausen (spelling?)?

I generally think of it as first significant signs of ferm(ie bubbles less than 15 secs apart of so).
Lag time is something I've never tried to measure exactly 'cuz fermentation always starts when I'm asleep or away. Might be that there's a fermentation fairy that won't show up if you're there?!?!

I agree with FastEddy...I think when bubbling in the airlock appears at a decent rate, fermentation is in the embyonic stages. I think the bubbling starts well before that film of brown yeast scum appears on the surface before things get a-rockin' (don't go a-knockin'!!). I also think he's right about the fermentation fairy---"a watched pot never boils", ya know!!;)
