I was able to pick up 50 pounds of light malt extract for $50.00 eight years ago. The malt was discounted because it was 'rock malt'. I repackaged it and broke it up. I have since used it with success when I made 3 gallons of beer from a kit and 8 ounces of rock malt. However, I recently put together a tap system and brewed my first five gallon batch of beer in some time. I used two pounds of my rock malt with this batch and I have noticed an off taste in my beer. I am almost positive that this taste is related to the dry malt as everything else is fine with the beer. I am wondering if anyone has any ideas on how I could still use my bargain dry malt when brewing without getting the off taste. I have at least 20 pounds of it left so I would hate to just toss it out.

You may have enough malt to make 50 starters. I can't imagine 8 year old DME would still be good under any circumstances. But using 4 oz at a time, how bad can the off taste be if you just use it for starters.

I was wondering if I heated or soaked it for a long time or boiled it with some hops prior to adding other brewing ingredients if it would work.
