Howdy-

Just curious about what this yeast floccing thing is. I'm controling the temp of my fermentation, and I noticed on other threads some reference to the yeast "floccing out" and such. I wouldn't want that to be another leson learned the hard way...

It is the yeast dropping out of suspension and falling to the bottom of the fermentor, in a nut shell.

Floc'cing is short for flocculating. It's a fancy term for the yeast cells sticking together and falling out of suspension.

This is a good thing, as it helps the beer to clear. On the other hand, extremely high flocculation can leave the beer somewhat unfermented, and require some mixing (rousing) to get it back into suspension so it can finish.
