View Full Version : To pitch this yeast or not to pitch?

I stepped up some good yeast (well, it was good the last time I brewed with it) from a slant culture out of my fridge... I've stepped it up, it seems to have the same characteristics (despite being over a year old), grows well, but I haven't seen it form a krausen in any of my bottles that I stepped it up in.... (I could've just missed the krausen maybe?).

Anyway, it ferments well and has the characters I want, and seems healthy and uncomtaminated.... what to do?

Go for it, worse that could happen is you may have to do a repitch.

It's it's fermenting and it doesn't smell funny - use it.
