There is a kind of enzyme which is called aldc for beer brewing in Our company .Our product has been used in many famous Breweries in China such as Tsingtao beer, Pearl-river beer, Huarun beer, etc and showed that the whole fermentation cycle was shortened to 10 days. The ALDC is used for Diacetyl reduction. It renders Diacetyl into a less flavor active compound. It is most effective when added before/during fermentation.
I woulk like to ask you which one do you like to drink,the beer are made from big company in the country/world,or they are from the local beer manufactory?Why?
Could we discuss it ?

I don't mind a bit of diacetyl as I normally drink ales, but (yes steveh) the lagers are growing on me.

I definitely like the microbrews and the local manufacturers better than the macrobrews or big manufacturers.
To me, it's like the difference between going to a nice stand-alone restaurant owned and operated by your average guy/gal who has a passion for food - or going to some chain restaurant where the people who care about the food are long gone and you've got a trained monkey in the kitchen who only knows how to make a specific dish the way that corporate tells them too. It may be a decent meal, but the magic is totally lost.
Along those same lines... I'd say that nothing beats a home cooked meal: there's nothing quite like quaffing a brew you made yourself.
Regarding the Diacetyl reducing agent: I'd be putting something into my beer in order to take something out. What are the tradeoffs? Does it impart any off flavors? Does it affect head retention? Also, how does the reduction of Diacetyl decrease the fermentation time?
And the most important question is...: What kind of beer do *you* like?

That and isn't it worth the wait? It's like aging wine, only not nearly as bad..
Especially after being stationed in Michigan for a while... Microbrews are my choice.

I think another line summed it up as well... it's the difference between manufactured beer and a crafted brew.

In our coutry we also like the local flavor.In my opinion,I like the Blue Belt which I was the first time to drink beer.It is a magicing feeling that the other ones I drank are not so good.
