Tonight I had "Banger's & Smahers" at Squatter's Brew Pub in Salt Lake City. It consists of two grilled braut's, carmelized onions, sauercraut, and mashed red potato's with gravy. I ate this with a great Heffeweisen! Good stuff Maynard!!!

Damn, Roger!!! That sounds great!! Can't wait for my buddy's Oktoberfest!! His wife boils brats in Shiner bock (along with onions, etc.) and then broils them!! MMMmmm MMMMMmm!! Sauerkraut and creamy mashed taters and good rye bread and good brown mustard....

A half barrel of Shiner bock in the kegerator helps the festivities and I brewed an O'fest (ale version) for the party! I can't wait to taste it...

(But when it is, I'll be right there with ya enjoying some different German Oktoberfest beers and local fests!)

I love Bangers & Mash! Boiling the sausages in beer (I've used many kinds, but find this a good way of using that bottle of swill in the back of the fridge that you can't bear to drink) before either broiling, grilling, or pan frying is tops! I opt for the pan so I can fry the onions at the same time, and I crush a clove or two of garlic into the potato water when they begin to boil. Add fresh boiled peas, and viola! Dinnah!

I gotta disagree. I took all the leftover swill from my employees' labor Day party and boiled about 25 pounds of homemade brats in it for Octoberfest. It worked great. I had put too much salt in the sausages but after boiling them 45 minutes in 10 gallons of beer they were great, and there was no reason to use good beer for it.
Now if I'm doing a special dinner with good brats for just us I may use good beer, but for mass quantities swill is great.

I used to believe you shouldn't waste the good beer on the brats and I'd buy a quart of Old Mil or Blatz -- but the truth is; the better flavored beer makes the brats taste better too. Think about it, do you want a brat to taste like Hamm's, or Paulaner Salvator?

Well, when I have 3 beers in the fridge and one is crap from a sampler box and I'm making bangers with the Woolie's brand sausages, then its that beer that gets used. And yes, 'simmer' them, its what I meant when I wrote 'boil'.
Now if I'm gourmet cooking some good butcher or home-made brats, then the good beer gets used.

If I have to make a 350 mile round trip beer run for some Salvator, it damn sure wont get poured into a pot full of sausage.

The best Brats that I ever made were boiled with cheap beer and about 15 onions. My cousin from Wisconsin brought the brats to a family reunion, and he and I manned 3 grills for 5 hours.

We poured the good beer into our mouths.

That was they day that I found out that my wife was pregnant with our second child.

Hah! I wasn't exactly suggesting that, but don't discount the possibilities that the good beer might just make the brats that much better!
