Know of any brewpubs/breweries I should not miss while there next weekend? I looked at the list of ones here and there looks to be 4-5. How were you guys experiences in LV, beerwise?

Here's my favorites :
Big Dogs Brewing Company - a very nice brewpub in the northwest part of the city with a varied selection and consistently good food. Sattelite outlets in two other locations.l
Chicago Brewing Company - another very good brewpub on the city's west side. Several GABF award winning beers, and a killer IPA. Sattelite location downtown at the Four Queens.
Hoffbrau - not far from the strip the place is pretty amazing. Big glasses of beer, and great (albeit expensive) German food.
Freakin' Frog - Las Vegas' only real beer bar. They now stock something like 400 different beers. Bring your credit card with you though as you'll be paying for all the variety.
BJ's Brewhouse - on the far west side, not really an actual brewpub, their beers come from other BJ's in CA and AZ. A solid core lineup with very good seasonals and guest taps.
Tenaya Creek - not really my favorite, but the brewer there makes some outstanding warm weather beers including a Kolsch, Hefe, and a GABG winning pilsner. Pretty good food too.
Triple Seven Brewpub - downtown at the Main Street Station Casino / Hotel. Very good brews, with sushi bar, and an outstanding menu of other items. Try the jumbo shrimp cocktail with the prime rib burrito!

I've been to Hofbrau and Triple 7. Also Monte Carlo (fair beers, not great) in the Monte carlo casino. I believe there is a local Gordon Biersh as well. Holy Cow is long closed. And there is another on just off the strip that gets uniformly horrible reviews so I have avoided it. Forget the name but have passed it several times.

Chaz, would that be the ever popular Ellis Island casino and brewery? If so, STAY AWAY, it's freakin' horrible.

Yep That is the one. I have heard horrible things about it. Not one good thing so even though it pains me not to try a new brewpub I will not go there. Besides, Hofbrau Haus is only a few blocks from there.:D
