I was in the process of brewing some hard cider when my AC went out (like hours after i started :() The temp has been ranging all over the place, from like 65-85ish area, how bad will that affect the Cider?
(ps, i'm very new at brewing)

first of all..

relax. don't worry. have a homebrew.

the temp at which you ferment does contribute to your flavor profile. warm temps contribute to more fruity flavors, and a faster fermentation. 85F should be no problem, but i'd try not to let it get much warmer than that.

as long as your sanitation and recipe are good, then you'll have good beer, regardless or temp (within reason)!

You can try to keep the temp of your carboy at a more stable "average" temperature but setting the carboy/bucket in a large container with water. secure a towel around the carboy, and let the towel hang in the water. The water should minimize the temp fluxuations some.

Personally, I wouldn't worry about it a bit.

i concur on not worrying. i don't run my a/c unless it gets over 90 (one of the benefits of low humidity, back in WI i started the a/c on memorial day and turned it off in october). temps go all over the place. one thing you can do is keep the brew in a dark room in the center of your home (or basement) where temps don't fluctuate enough...personally i just don't worry about it at all.

I too wouldn't worry about it. Take a look at the temp chart on Wyeast's website...

The one caveat to the "don't worry" philosophy: It depends on the yeast, higher temps can affect the flavor profile of your resulting beer, but that's something to worry about for later batches....

hey b3, I know where you're coming from regarding the humidity. It was in the upper 80's earlier today, but fairly low humidity. It's 70º right now, but the dewpoint is up to 59º and I feel like I'm melting...

Maybe off topic, but what about the impacts of storing bottled conditioned beer in the summer heat? I have no where to store but in my apartment so the temp. varies with the weather. Will there be any damage done by the rise to a 90 degree day? I keep it in the center of the apt. and in cases so there is some day-to-day consistancy of temp..
Your thoughts?

same as me...and i'm, according to my daughter who is visiting for the summer, mean when it comes to a/c.

all i can say is: no worries, mate.
