Made a 2xIPA last Saturday and kegged it yesterday. This is the first batch I've made with the LeSaffre S-56 Chico knock-off and it works very well although it was a bit of a slow starter. Nonetheless, the batch had an apparent attenuation of a whopping 80%. (Went from 1.80 to 1.010 in 8 days.) As is typicall of Wyeast 1056 it is a little hazy but clearing well. I cannot comment on yeast flavor characteristics at this time, however, because the beer is absurdly hoppy. I will say it is nicely malty tho.

2-row pale, Munich & 60L Crystal (next time I'm using 40), all Briess. OG ~80, FG ~10.
Galena & Columbus for bittering, finished with Centennial, Chinook, and Crystal. Dry-hopped with Horizon. BU's in the mid-sixties.
You already know the yeast.
The finished beer is malty, very floral and quite perfumy. And the alcohol is very well hidden. Just enough there to taste w/o being barleywine-ish. I drank three pints last night for the hell of it, now wishing I hadn't -- but only slightly. ;)

Ive do the same for my house beer with vairous base malts (on a whim):
Try Golden Promise or Munich Malt for a maltier beer. I also throw in a # of caravienne for extra body. I like the teakish color from a combo of crystal 30, 40, 60 for the X2 IPA and the way the body slows it down.

I thought what the hell - I've brewed with 1056 many times so I'll give this dry a try and see what I think. Brewing this tomorrow:

It came out just the way it should. Nice hop flavor, some residual sweetness, nice clean flavor, malt and hop nose. You can taste the malt and the hops - no noticeable ester fruity-ness. Tastes like a beer brewed with 1056 to me.
