Is it fair to assume that if I pitched two different yeasts into the exact same batch of wort and one turned out crystal clear and the other is very hazy, that the haze is yeast in susension? (2565 is a very low floc yeast and 2112 is very high floc).

yes, especially if you handled them identically/together...
Yup. Same basement at the same temp, same secondary fridge, same lagering time. I am amazed at how different the two versions turned out to be.

If my quick searches are correct, you pitched a Steam yeast and a Kolsh yeast? How would you characterize the yeasts compared to each other, flavorwise?
The CA Common yeast would be a far more appropriate yeast if you are not able to filter or lager. However, even though the yeast hasn't settled and I can still taste it in the final product, the Kolsch yeast is definitely more complex and adds an extra dimesion to the flavor.
I favor the 2112 because it allows the malt and hop profiles to come through and the yeast takes a back seat.
I sent a couple of the 2112 version to a more educated palate and I will see what he has to say about how appropriate it is to style.
