View Full Version : Starter wort frozen in jars

I am going to use the late runnings of my mashes into 32oz canning jars and freezer them for use as starter wort.

My question is: Since I am not going to be using the wort for anything other than a starter and none (or next to none of the starter wort ever makes it into my main wort, is there any reason to boil longer than 15 minutes for sterilization (assuming I have the appropriate gravity)?

well, there are seven reasons for boiling 60 minutes, and most are related to finished product, not starters. I can't see why not...

(here's the list...)

1. Extracts, isomerizes and dissolves the hop alpha-acids
2. Stops enzymatic activity
3. Kills bacteria, fungi, and wild yeast
4. Coagulates undesired proteins and polyphenols in the hot break
4. Stabilizes salts for correct boil pH
5. Evaporates undesirable harsh hop oils, sulfur compounds, ketones, and esters.
6. Promotes the formation of melanoidins and caramelizes some of the wort sugars
7. Evaporates water vapor, condensing the wort to the proper volume and gravity.

but to be safe, you could always boil them for an hour, then can the starter, just to be sure...
