hi, I've just started to get into homebrewing, and have completed two batches of beer so far. My question is, does anyone have a simple recipe using a malt extract kit that is really good? My problem is that I can't get a lot of the specific ingrediants required for some recipes, as all the brew shops in my area are very limited in what they carry. I had to try about four places just to get a tin of DME, as no one seems to carry the stuff???? All the guys at the brew shops keep telling me to just add corn sugar to the kits, and that's all!!!

I'd suggest finding a reputable internet/mail-order supplier. There are many reputable suppliers out there. I'm sure some people here can suggest one or two. With a source or two, you can get just about anything you want. Exactly what you want, without having to settle. I live in Portland and have access to great dealers, but if I didn't, I'd be ordering off the net. It is a horrible to feeling to say, " I wish I hadn't settled for ....." or " Wish I had brewed what I really wanted, instead of a half-hearted attempt at what was in stock."

uh... where do you live so that I never accidently move there?

lots of places on the web that will sell you kits that include everything you need.

simple recipe:

Ingredients:
1/2 pound of any malted barley (medium roast, milled) - optional
about 6-8 pounds of light unhopped malt extract
couple ounces of hops
brewers yeast

put grain in a grain sack, add to 3 gal cold water. Bring to boil, remove grain sack.

stir in extract, boil for 30 mins or so

add some of the hops, boil for 15 minutes
add remaining hops, boil for 5 minutes

pour through a sterilized collander or mesh screen into primary with 2.5 gallons of cold water. Pitch yeast when temp gets to desirable range.

Can't add anything to what's been said already.

YXS gave you the recipe that I had in mind. It doesn't get much simpler than that. Any brew shop, no matter where it is, should have those most basic of ingredients.

Give the internet a shot. Many folks here use online retailers and are satisfied. I am fortunate to be within a half hours drive of at least 4 who stock pretty much anything I need.

Good recipe from Yamaha---and I don't want to accidentally move to where you live, either. Two internet shops that I know of that stock damn near everything are morebeer.com & williamsbrewing.com. I have dealt with morebeer.com a few times and was EXTREMELY satisfied. Check them out!
