On my last mr beer I did, I added some honey. Like 5 pounds of honey, and the ale yeast seems to be doing okay so far, and it's been almost 2 weeks, it just keeps on bubbling, I am just wondering if i should try to rack this into a secondary, theres only about a 1/4 inch of pure white sediment on the floor of the carboy, or should I just let it keep on bubbling for as long as it will or I care to let it, then drink? I am not expecting anything spectacular out of this, but will be pleaseantly surprised if it is. the mr beer can was the wheat beer type.

In my experience, honey can take a *long* time to ferment to "safety" (read: no bottle-bombs).

With 2 weeks in primary, you're still well within range for leaving it sit; personal preference is to rack to secondary at 3-4 weeks. As to when to bottle, keep an eye on the hydrometer readings. :)

Yeah, what he said. Let your hydrometer be your guide. A consistent ready of over a week is what you are looking for.

As mentioned, honey can take a lot time to ferment out. My experience with mead tells me 12-15# of honey in 5 gal. batch can take several months to ferment out. Five pounds is an awful lot for a 5 gal. batch of beer. A pound or so would usually suffice.
and even then, some does not ferment out completely and you are left with some residual sweetness.

Check the hydrometer to be safe.

Sorry I thought I made it clear, its Mr. beer so it is only 2 gallons, So, thats alot of honey for 2 gallons I thought , for ale yeast anyways. So I'll just let it ride fotr awhile longer then I guess.

With that much honey in only 2 gallons, you are going to have to treat it more like a mead than a beer.

My last mead was 3# of honey in 1 gallon, and it is still fermenting 3 months later. I won't even bottle until 6 months, and I won't even drink it for a year.

What yeast are you using? The ABV on this is going to be very high, and your yeast may poop out before it finishes.
