What's a good Wyeast to use to get a nice nutty flavor out of the beer? I've checked their web site, and so far, I leaning twoard 1338 European Ale.
Any other suggestions?

Are you considering White Labs yeast? I used the WLP-004 Irish ale for my last nut brown and really liked it!

I could use White Labs. Actually never tried it, because I have such good results wtih Wyeast...
