I went to the LHBS to get an extract kit today, I worked with the guy a bit and came up with this recipe:

7lbs. Light LME
1lb. Crystal 40* (steeped)
1 oz. Nugget (12.1%) 60 mins
.5% Goldings (4.1%) 15 mins
.5% Goldings (4.1%) 5 mins
Wyeast 1098 British Ale

What might I be dealing with as far as OG, FG and IBU? How much flavor and aroma can I expect with these hop additions? (I'm not looking for anything overpowering, actually more subtle...) And is this just a basic English Pale?

1.055 OG
1.012 FG
5.7 ABV
44.6 IBU

...according to ProMash; I'l let the experts analyze the flavor profile. :)

I think your working with an ESB (http://www.bjcp.org/styles04/Category8.html#style8C) here. Pretty basic recipe, should be pretty good.

I got different numbers in promash. What ingredients did you use, blueharp?

I got:

SG: 1.069
FG: 1.012
7.56 ABV
49.8 IBU

I don't get it.

OG = 1.053
IBU = 52 (pellet), 48 (whole)
SRM = 9
ABV = 5.1%

I've never used nugget so I'm not sure how it will blend with goldings, but everything seems usual. Depends on how fresh the extract is.

Ask 10 different brewers and you get 10 different answers. My values are for 5.5 gallons, I forgot to mention that.

Wow, very interesting are the different results.

(huh, that sounded a little Yoda-ish!)

Ah, I used 5 gallons. Not a big difference though.

If I wanted to back the bitterness down a hair (to 30?) how would I change the hops? I guess I want to make sure it's an easy drinking ale...

Cut your nugget addition back to .5 or .75 oz.

I used:

7# Generic LME @ 1.035
1# Crystal 40L @ 1.034

1 oz nugget pellets @ 12.1 (60 min)
.5 oz EK Goldings @ 4.1 (15 min)
.5 oz EK Goldings @ 4.1 (5 min)

Wyeast 1098

SG: 1.051
FG: 1.012
5.14 ABV
54.4 IBU
12.4 SRM

This was an extract recipe; 5 gal, 3 gal wort, 60 minute boil.

If I change it to a partial mash with 30% eff., it doesn't change.

What size wort did you use? were the potential SG's the same for the malts?

My wort size ended up being closer to 2.5 gallons (to help avoid boilover) everything went pretty well. I love the smell of the Goldings hops, I can't wait to taste it. I ended up with the full 1oz. of Nugget as well.

I foolishly forgot to take an OG reading, is it possible to take one now (how would I do it?) or should I just let it go. It's fermenting nicely even though the environment is a little chilly around 62 degrees.

I bought another plastic fermenter at the store and decided to brew a cherry wheat while I had all the stuff out. For some odd reason, I was able to get a nice, controlled boil with the wheat, while the ESB was all over the place, I was constantly changing the heat setting.

Also, is Saaz a normal hop for a wheat beer? I thought Hallertau or Tettaning (sp?) were more traditional hops, but it's what the recipe said, so I went with it.

Your beer, your choice. But, all Noble hops share similar characteristics, and can usually be used interchangably without taking the beer out of style. Saaz are GOOOOD! (Of course so is Hallertau...)

If your beer is currently fermenting let it alone to do its thing. It's not worth the risk for skewed data. Take an OG on your next batch.
