i just boiled up a 3lb. 10 oz. can of mexican cerveza and poured it in my fermenter and added water of course filling it to the 8 quart mark. this was at 9:30 eastern usa time and its already breathing through the hat type airlock. this can is also approximatley 4 years old. no kidding! it smelled ok and even tasted ok but from your past experience what do you think? do you think its too much as far as malt to water ratio? im sure to some it would be a matter of taste. i know some folx may think this sounds awful but i just started get the bug to brew again and i dont have a larger fermenter. i hope ive included enough info. i just wanna hear your 2 cents worth. thank you in advance...........and yes,..........im new here. cant you tell? hee hee!

Many welcomes to you! I'm sure one of our resident brewing geeks will have an answer for you. My guess would be to say that if it was canned and all smelled good and tasted good that you're good to go and ready to launch... but that's just me. ;)

What ever about the best before date, your malt/water ratio will just give you stronger beer.
From the top of my head, LME is about 1.036 ppg, so your original gravity was probably around the 1.065 mark. You may be heading for 6% beer or so, so as you say it's just a matter of taste.

it'll probably be darker than it was originally designed to be, LME gets darker as it ages...
