I've had a batch fermenting in a second for 11 days and will not have time to bottle it before I leave for vacation tomorrow for a week. How long can I leave my beer in a plastic secondary fermenter without ruining it?

By the way, I'm going on an Alaskan cruise with a stop in Victoria Canada. I will be getting off the boat to go on a brewpub tour. Can anyone recommend some Canadian brews that I should seek out?

....as for some Canadian brew, you can't go wrong with Moosehead. It's really big in Eastern Canada, as it's brewed in the Nova Scotia. Kokanee is big in BC, not a bad brew. If you are going to drink a Molson product, avoid Canadian as it's a terrible beer. Instead, go for an Ex, probably the best Molson beer anyway....
