Today marked 2 weeks since bottling my nut brown. I cracked one open and was very pleased. I think I'm going to tone down the hops a bit on the next batch, as this was supposed to be a sweeter beer. This batch actually has a little bite at the end of it. Can anyone recommend a nice finishing hop for a darker/sweeter beer? I used willimette and I don't think that was a good match.

I bottled my Strawberry Wheat today also. I was surprised to see the FG of 1.010 after all the stuff I put in it. It wasn't even the slightest bit pink though. Just a nice amber hue similar to the last batch of wheat beer I made. Surprisingly clear and it definately smells of strawberries. This is going to be a TOUGH batch to let sit and age. I only got 32 bottles (due to my explosive blowoff during primary fermentation) out of it, so these will be more scarce than a standard batch.

Just wait a couple more weeks on the nut brown, the bitterness will fade quickly.

The fruit beers typically will end up with very little residual color from the fruit additions, most settles out or is consumed by the yeast. My raspberry wheat had 44 oz of fruit puree and only has the slightest hint of red to it.
