View Full Version : Anyone tried John Palmers "Cincinnati Pale Ale" recipe?

It was listed on the site in the crash course to home brewing:

3-4 lb. Pale malt extract syrup, unhopped
2 lb. Amber dry malt extract
12 AAU of bittering hops (any variety) For example, 1 oz. of 12% AA Nugget, or 1.5 oz. of 8% AA Perle
5 AAU of finishing hops (Cascade or other) For example, 1 oz. of 5% Cascade or 1.25 oz. of 4% Liberty
2 packets of dried ale yeast
Ingredients seem interesting. Light but with a bit of amber and the right amount of AAU. It's like I've been told with cooking, if the ingredients sound good, you can be sure it comes out good.
I just wondered if anyone here made it and what their thoughts where on it. If it is any good, I'll try his porter recipe after that.

For those wondering, this will be my second batch. My first one was a wheat ale I made from a kit, nothing else. It came out ok, but I used FOUR cups of sugar to make it and used sugar to bottle it... and no, not corn sugar. I don't think it was much more of a kit than just yeast and extract. Very mild with a cidery taste to it.
I'm looking for something now that tastes like it came from a commercial microbrewery almost, something I'll be proud of.

did the kit tell you to use that much sugar? If so, I would ifnd another company. Their are better ways to increase the og of a beer and have beeter results like a fuller body and mouthfeel such as increasing the extract bill. For instance, try 6.6 lbs of the extract syrup instead and bottle with 3/4 cup of corn sugar. Your results will be much better.

That recipe does sound pretty good. I might add a little more hops and I would definitely use liquid yeast, but I might try it the way it's listed, too.

What's the difference between liquid and dry yeast though? Will it change the taste or carbonation?

It was Munton's "Wheat Ale" and yes, it called for four cups of sugar or use of malt to reduce the cidery taste.

Really? IBU calculators I've tried show the bitterness to be real high, I was worried it'd be more like an India Pale Ale than an American Pale Ale.
I like bitter beers, but if this does turn out low, no complaints.
i did it for my first brew, but i used dme instead of lme. turned out quite good. i used centennial (1.5 oz.) and cascade (1 oz.) for the hops. not a bad beer at all.
