For my next batch that I intend to brew in a couple of weeks, I was going to do a Belgian Wit, but I'm more in the mood for a nice, hoppy American Pale Ale (dry hopped, of course!). I brewed one last year using Centennial & Cascade, but would rather do something a touch different (hop-wise) this time around. Anyone out there brew a good one lately??

I have a Gearys Pale Ale clone in the secondary now . It has been there for a week and a half dry hopping with cascade mmmmmmmmmmm. Would you like the all grain or extract recipe?

i did a pale ale a couple of months ago. It was very good and you can find the recipe and pics in this thread (http://www.realbeer.com/discussions/showthread.php?s=&threadid=247)

mostly extract, BUT VERY VERY good. probably the best beer i have ever brewed.

As found in Clone Brews by Tess and Mark Szamatulski.

Geary's Pale Ale

All grain for 5 gallon batch (double for 10 gallon)

8 lb British 2 row Pale MAlt
10 oz 55 degree l British Crystal MAlt
3 oz Chocolate MAlt

Mash at 150 for 90 minutes
Sparge and bring to boil
At boil add 1 oz Cascade and 1 oz Mt. Hood for 90 minutes
Add 1/2 oz Tettnanger and irish moss for last 15 minutes of the boil.
Add 1/2 oz fuggle for last 10 minutes of boil
add 1/2 oz fuggle at flameout

Chill and aireate wort to 75 and pitch Wyeast 1056 American Ale

Once primary fermentation is complete transfer and dry hop with 1/2 oz cascade

OG 1.046-1.048 IBU 35 FG 1.010-1.012

That is what the recipe called for. I substituted Sazz for Tetnanger because I had some left over. I also added 10% to the grain bill to increase sugar extraction. I will be kegging this in another week or so. MMMMMMMMM Let me know how it works out.

well, i have not brewed it yet, but the apa i was gonna do (this weekend) is:
10# american 6-row
1# american crystal 20L
1 oz. centennial @ 60 minutes.
1 oz. fuggles @ 15 minutes.
1 oz. fuggles dry hopped
wyeast american ale yeast.
