Star San is labeled as an acid based sanitizer, and that its contact with plastic should be limited... do they mean that you shouldnt leave it in contact with plastic for too long or that it shouldnt be used on plastic? I'd like to use it on my Mr Beer fermenter but i dont know if its going to burn a hole in it or what.....

You can use it on plastic but contact time should be minimal. You will be ok if it is in there for 45 minutes or so but I would certainly not leave it overnight.
If you would like to see what it can do cut a small length of plastic, like a piece of Foxx hose or something, and then let it soak overnight. It gets rather slimy and funky.
Edit: even a couple of hours is not going to harm your plastic but since the contact time at the proper dilution is very short there is no need to worry.

The stuff works rather quick though right? It should only take 2 or 3 minutes to sanatize with that stuff shouldnt it?
I was thinking it probably would be okay to use if used for the minumum amount of time possible.

It only takes a few minutes to sanitize, but for storage, I use a carboy. It is reuseable as long as the pH remains below 3 and I have reused the stuff for over a month. It makes that $15 bottle last a bit longer.
Like Brewmonkey says, I left a beer line in a bucket of starsan overnight and it turned into a perfect foam producing device.
