well, the latest to come from my mad scientist laboratory is a dry stout. i was going for a slightly hoppier guinness to combine the best, imo, of both worlds. registers a 7% abv and quite a few IBUs over guinness (more like the mid-range for an IPA). i'm quite pleased. it's a bit green, but i'm impatient when it comes to a fridge without beer. i think i'll cut back on the black patent and add more roasted barley next time. the maltiness (quite malty, even with the extra hoppiness) is a touch bitter. the color is spot on where i wanted it...i've got 12 16-oz ez-caps storing for a bit longer and a 22oz. bottle for long term storage.

overall, given that i've mostly brewed pale ales up to this point, i am quite impressed...and the oatmeal (only a bit) really does increase the longevity of the head...something that i need since i don't have one of those fancy dispersers with NO that all the real guiness places have.

now if that IPA would finish up! and that damn honey wheat still has not collapsed the krausen.

yeah, with 10 gallons in bottles and 5 in primary you probably won't hear tooooo many complaints. now if i only had a bottle of bushmills to go with this stout! whoops, there i go complaining!

lol. about the only thing going well for me is my brewing...at least beer can take the edge off of things.

I have been trying to brew at least one of everything I can get my hands on, I'll decide what I like when I'm done.

My IPA is ticking along and my barleywine doesn't look like it's ever going to make it into the secondary.

I have an Imperial Stout that is ready for bottling and a Kolsch that I'm trying to leave alone in spite of the hot weather.

Don't rush your barley wine. I bottled mine after 6 months in a primary and secondary and have only had a bottle or two since. It is coming up on a year now. I wish it had a tad more carbornation though. I have heard of some carbonation tablets that you can place in bottles. Anyone hear of these? My barley wine is in a grolsch container so it would be easy to open and reseal.

are you referring to primetabs? basically corn sugar tablets put 1-3 in each bottle and then add beer i think is the way they work.

I had a nut brown lager that wouldn't carbonate, it sat for 2 months in the refrigerator and was still just the tiniest bit fizzy when I opened one.
When I moved it into the basement finally for storage and raised it's temp to 70F, they finally fully carbonated.
It's probably a little late for your barleywine, I doubt that there will be any active yeast left in the bottles. But it may be worth a try.
