This is Dupont's all-organic beer--the malt and hops were all produced organically.

my bottle was cork dated 2.0004 (so feb. 2004?)

appearance: hazy light honey orange with a quite thick, frothy head that keeps the beer capped all the way down.

smell: tangerine, hay, leather. there is also a strong similarity to the bubblegum and clove aroma from a hefe.

taste: good strong carbonation, like hennepin but even bubblier. citrus (tangerine), apricot, honey, white grape and green apple come through to varying degrees at first and settle into a bready malt flavor. alcohol is quite present and contributes to a very dry, mineral finish with earthy hop aftertaste. some very herbal, grassy flavors come out as it warms to room temperature (served at cellar temp), which adds a good bit to the flavor profile.

well hopped, with enough malt to keep things interesting, though not as complex as some saisons. it's missing that delicious really funky barnyard flavor that some saisons have, but it's fleeting sweetness and very dry hopiness make it, like all saisons, a great food beer. this one almost reminded me of orval at some points. i like the bone dry finish and healthy carbonation. not sure how i'd compare it with hennepin or saison dupont (which i havent had in a long time) but id say both of those are a bit more complex and on the sweeter and more rounded side, while this one is characterized more by the dryness, which makes it very appetizing.
all in all a nice beer and a good match with my chicken stuffed with goat cheese. I would think it would also be good with shellfish and other seafood.

I liked this one pretty well too...

Hazy and sedimented, color of darker pineapple juice in hue. Nice head, rising to an inch and generally creamy. Attractive lace on the glass. Slight farm aroma, notes of slightly spoiled wine and tart peach. Light and spritzy mouthfeel as most of the style. Lightly lemony and leathery in overall flavor with an impressive mid mouth bittering starting to seep in. The end note is diminished, a combination of very dry hopping and a very soft rounding down of the carbonation. Dry but subtle in the aftertaste. Maybe slightly more "blurred" than other Saisons but maybe more drinkable as well, without losing the hoppy hallmark that's usually typical.
