View Full Version : IPA Tastes like Iced Tea?

I have finished two batches of IPA, with two different recipes, and both have a distinct 'iced tea' flavor to them. Could this have something to do with dry hopping? Has anyone else experienced anything like this before?

do you mean like tea that's steeped too long, and has a dry, astringent taste? Since you posted this in the "extract" forum, I'll assume that's how you made it. if it's an astringent taste, I'd be willing to bet that you steeped your specialty grains in too much water. that extracts tannins from the grains, and gives that astringent, tea like taste... or steeped too hot, over 170ºF...

It tastes ok to my non-brewing friends, but it tastes so much like old iced tea (to me) that I can't drink it.
danno: It is an extract recipe. I'm not sure how much is too much water (grains were steeped in 1.5 gallons for 30 min). If the too hot of temp thing could cause this, then I'll try to fix that. I think I may have let the water get too hot (electric stove) and couldn't get it to cool off fast enough. The recipe I used also called for 'squeezing the *%&# out of the grains' to get all the 'good liquor'. Could this have had some effect?
This is only my third batch of beer. First IPA came out too weak (and tasted like tea), Oatmeal Stout has good flavor, but yeast didn't carbonate well; but my Belgian ale came out great. I'll check all my notes and see what the steeping temps were.

Squeezing the hell out of your steeped specialty grains can, and will, leach out tannins that will give an astringent character to your beer. So that could quite possibly be it.

Definately don't squeeze. You could sparge, or rinse them with some warm water.
