Hey out there...looking for an extract recipe for a good chocolate cherry stout or porter. Newbee brewer with just a few batches, I would also be interested in a few details...I would like to have something I could bottle in the next few weeks and leave alone until the Holidays; i.e how long in the primary, secondary and in the bottle...thanks in advance, GREAT site!

don't use any recipe that uses a fruit flavoring extract, thay aren't even close in flavoring.

Just brew your normal Stout recipe with the addition of 1 1/2 LBS Baker's Non Milk Chocolate in the boil, and toss in 3 LBS of frozen cherries in your primary fermenter (you know that little Plastic pail that you don't use anymore) thay work well for fruited beers.

I have a 3 gallon keg and some bombers conditioning with my Chocolate Cherry Porter. As said above, I just added 1# of semi-sweet baker's chocolate along with my extract then added 48 oz. of cherry puree at knockout. Everything was tossed into the primary. Primary for 12 days at 68ºF, secondary for 3 weeks at same temp. and conditioned with 3/4 cup of honey for 4 weeks.

I made that Night Cap Cherry Stout it was ok, I used only half of the cherry flavoring. I suppose you would get better result using real cherries.

I believe brewmonkey made a chocolate cherry stout in the brewery where he worked a few years back. If I remember, he had some problems with head retention, due to the cocoa maybe?

Someone should send him a PM if he hasn't already seen this thread.
