I am planning on brewing an all-grain Belgian wit bier in a couple of weeks. Most of the recipes I have seen call for some amount of dried curacao orange peel and coriander seed. Any suggestions on how much is a good amount to use without the flavor overpowering the brew? All recipes call for radically differing amounts. Also, is steeping the spices in a garden-variety muslin hop bag ok, or should I try to get something a little more restrictive?

this really comes down to your personal taste. Personally i Would add a little of each in the muslin bag and place it in with the secondary after primary fermentation is complete and add to strengthen the taste if desired. It is easier to add a taste than take it away;)

Thanks, Tom.....I guess I'll start with 1/2 oz. of each and go from there. It sees that was the middle ground of the recipes I saw.
