View Full Version : 2nd boil and chill

OK heres the scenario this time...
Im brewing an Alt, following the advice from my last fiasco I mashed in much hotter and hit dead on @ 155 dropping to 150 @ 60 minutes everythings great- except my efficiency was about 63%. so instead of the 1.055 I was shooting for my O.G. is 1.046 still within style but since my boil off rate wasnt what it should have been I ended up with 1 approx. 1 gallon more than I needed for my primary.
So to make a long story longer, and having no DME on hand,I decided to reboil 1 1/2 gallons that was already chilled to boil off some h20 and hopefully gain a few fravity points once its chilled and added back.
Is there anything wrong with a reboil such as this? and If so what harm could it do? the only problem I can see is a little caramelization and in this situation(being an Alt) I wouldnt mind a little anyhow. My Srms were low at 12 so I have room for a little color.
BTW Im loveing this AG gig, I feel like a mad scientist daily. If only I could get it remotely right next time.

You'll probably up your bitterness a bit from the late hops being boiled longer than intended.

Darker beer from the extended boil due to the Mailliard reaction, more bitterness from the hops but also more percieved maltiness from the melanoidins formed.
