When we lived in Gnashville, the water was so bad that we used Culligan from the store, and kept it in an office-style water cooler. Now that we're in Colorado, I don't need such a beast, but it's so cool that I'd rather not just get rid of it. Is there a decent use for something like this in regards to home brewing?

Use it as a unitank for fermenting. You can pull the yeast out of the neck using the water tap. That's as close to useful as I could get.
You'd have to put a resealable hole in the bottom of the water bottle to allow CO2 to escape during the ferment.
I bet it would look cool while it was fermenting.....

I don't know how yours is constructed, but in all the ones I've seen, the liquid from the bottle pours into a little pool below the opening ( the mouth is the bottle get submerged and the flow stops ) where it is cooled. These never seem to have any kind of funnel to them, so pulling the yeast out wouldn't be possible (or feasible). The only thing I would think this is good for is what it was designed for, serving liquid. However, with no way to keep pressure in it, you'll have flat beer in no time.

The unitank idea is similar to the "Fermentap" which in my opinion absolutely does not work. The neck of the bottles just aren't steep enough.
