Thank you for the tips so far. We are looking for some farm land in New York to grow our own hops. Would it be better to just keg the beer or try to bottle it as well?

I keg everything, then bottle right from the taps whenever I need a couple of bottles... you can do it either way, but kegging is sooooooo much easier...

Where in NY are you looking? Lots of people around here (Otsego County) would love to see a comeback in the hops side of agriculture.

As far as I can see, bottling is the best way for microbreweries to market themselves beyond their catchment area. Definitely bottle some of the beer (and don't filter it first, as the people you'll be marketing it to will prefer it bottle-conditioned).

Some brewers will allow restraunts to put their name on the beer when it is served in their establishments. This is a good way to raise capital while also bottling and marketing your brands.
