View Full Version : Belgian porter

Inspired by a bottle of Alpha Klaus, (a porter brewed with american hops,) and a bottle of Avery's The Beast, I decided to brew a porter with american hops and belgian yeast.

MMMMMM!!!!! This is a wonderful beer! It tastes best at traditional ale temperatures, where the other flavors become assertive enough to balance the "belgianiness," which dominates when it is cooler. It's about 7-8% alcohol and about 70-80 IBU.

I've got the recipe if anyone wants it.

I have not tried the Alpha Klaus but any other beer I have sampled by FFF has been excellent.

Can you post it in the recipes section?

You need to get some; it is a nice smooth porter with a pronounced hop flavor that really compliments the porter without overpowering it.

I only had one bottle or I would send some your way; we had to go to IL to get it. My local distributor only carried their 12 ounce selections for some reason...I may have to raise a little you-know-what and see if they will get some bombers in.

Blues, if you picked up your Klaus this year, I imagine you noticed the hike in price from last year..? $8 a 22 ouncer? Eeyike.

I FINALLY had the 22 oz. bottle steveh sent me many moons ago - dee-freakin'-lishious! What a rich, complex brew. What is it in there that keeps reminding me of a good merlot? Really, this was wonderful, and made me think of porter, red wine, and chocolate milk all at the same time, but in a good way (does that make any sense?). Great stuff, and far from a guzzler - took about 2 hours to get through it. My kind of brew! :D

OK, here is my recipe:
This is for THREE GALLONS

1# english pale malt
12oz 50 degree crystal
6oz chocolate malt
6oz roasted barley

Steep for 30 minutes at 150F
add 3# dark malt extract and 1# light extract

Bring to a boil, add 7AAU Warrior hops, 4AAU Columbus
Boil 60 minutes
add 2oz cascade
boil 15 minutes

I did not add this, but in order to get more of the alpha klaus flavor, next time I brew, I will add 1/2oz simcoe or amarillo along with the cascade.

Cool and top it up to 3 gallons
ferment at 65-68F with wyeast 1214

I didn't notice the price...my cousin actually made the road trip; I handed him $50 and told him to bring me back some good beer!
I also got some Double Bastard, Stone Ruination, Stone IPA, Stone Russian Imperial Stout, and Avery Kaiser.
The only bad part is, I just found The Kaiser locally... I could have had more 'Klaus! :(

You guys are making me thirsty. All this talk of Alpha Klaus. If FFF come anywhere close to making it as good as the rest of their line then it must be wonderful. I just finished a Pride and Joy.

It is, Chaz; if you like hops, drink it fresh; if malt is your thing, let it sit a year...either way, it is a proud member of the FFF family.
