Welcome to the board!
I'll take a stab at it, though this will not be perfect, since I really don't know what the FG will be, nor the exact ratio in the Munton's kit enhancer.
The Web site says that Cooper's Aust. Stout can is 4 lbs. I'm plugging in Cooper's Dark LME (1.037 per lb) into Promash for this.
The Munton's Kit enhancer is 1 Kilo of a blend of corn sugar and DME. I'm gonna assume a 50/50 mix here and add 1.1 lbs of corn sugar (1.046 per lb) and 1.1 lbs of Munton's light DME (1.046).
So, in 23L ProMash tells me that this is going to be 1.041 SG
Here are the ABV's for a given set of FG's
FG ABV
1.010 4.07%
1.011 3.94%
1.012 3.81%
1.013 3.68%
SRM will be 19.9, which is a brown about the same shade as a milk chocolate candy bar (maybe a tad darker).
The less fermentable the LME/DME is (which I would hope a stout would be when compared to say a pils), the higher the FG, and therefore the LESS the ABV will be. I'd say you are looking in the neighborhood of 3.75% ABV give or take.

A littler lower than I was figureing, was hoping for in the 4.5 - 5 % range. I make lots of wine but little beer and was kind of curious, I knew that the different Malt Extracts fermented out at different rates & levels so I figured I'd ask. Thanks for the help.
