View Full Version : Quick question about storing beer in corny

Hello,
I'm just getting ready to transition to kegging and need help with one question: Is it fine to keg the beer in a corny and put CO2 on it to carbonate it, AND THEN STORE IT AT ROOM TEMP UNTIL YOUR READY TO DRINK IT? I have a small compact frig under my bar and it can only hold one 3 gallon corny at a time. So, the rest of my beer will be stored elsewhere.
Also, how long can I expect the un-refrigerated beer to keep?

I've never force carbonated at room temperature before so I don't know how it will do. It always helped me to drop the temp to 30ºF. But if the beer will sit a spell, why not condition it with DME or corn sugar. With only half the amount you'd use for bottling, your keg will be carbonated within 2 - 3 weeks.
At 65 - 75ºF, your beer should last 6 - 8 months without refrigeration. Hope that helps.

If I throw some DME or corn sugar in it, won't my pick-up tube dispense the sediment at the bottom of the tank when I tap it?
I guess I should clarify my original question a bit. I'm not too concerned with getting a complete carbonation of the beer via CO2 during the storage phase. I'm just looking to purge the O2 out of the tank, fill it with brew and then put some CO2 on it in order to preserve the beer. Then when I'm ready to use it, I'll chill and force carbonate to the appropiate level.
Will this work?

I just did this and it seems to be working pretty well... I added priming sugar as usual and then bottled about a dozen or so.... then kegged the rest. I carbed up to the point there were was enough pressure to keep the keg lid tight and then left it go. it's been about three weeks and I'll prob tap it soon.
