View Full Version : How long can wort sit before boil?

I want to make my mash this morning then keep it covered in my kettle until later tonight(8hrs or so).Is this advisable?

Leaving the mash or the wort that long will allow it time to start "souring." It would not be an intense sourness but it would nevertheless be there.
I would say that an hour or two is the most you should really wait for the boil unless you have the ability to keep the wort covered well and as close to 32F/0C as possible until you are ready to use it.

Thanks for the replies.I have decided against leaving the wort sit.I will just brew tomorrow instead.
