I was just wondering how long it takes after bottling for the beer to be fully carbonated

It depends on how much yeast is still in suspension and how much priming sugar (or whatever) you use.
Typically one to two weeks is sufficient, but some may take longer if they sat for an extended period in the secondary, or if the yeast was highly flocculent, meaning that it drops out of suspension quickly.
Lagers will take a bit longer as well simply because the lager yeasts work much more slowly.
I have a nut brown ale that's been in the refrigerator for 3 weeks now and still just barely gives a little hiss when I pop the tops.

Warmer temps with ales will help them carbonate better, I try to get them to between 70 and 75 for a week, then I test one and see where they're at.

I agree with paul. I also sample after about 2 weeks, but it can take much longer.

I had a batch of honey brown that I thought I brewed flat. After about a month, however, it developed a nice 2-3 cm head.

If you put them in the fridge too soon and they don't carbonate, you can always take them out and warm them to room temp for a few days to get the yeast going again.
