just purchased the book "beer captured", and i can't stop reading through all the recipes. great book! but my only problem is choosing a beer to brew. all of my beers (3) have been from kits, and i'm looking for something new. if anyone has brewed any of the beers from this book and have had enough success that you would suggest one, i'd greatly appreciate it. extract only, and no lagers please.

Harvey's Historic Porter is one that I brewed a little while back and am enjoying now. I love this one. I just brewed the kolsch from that book, but it's not ready yet. The sample at bottling tasted really good.

hey, thanks. a porter would be nice, and i never thought about a kolsch.
I brewed the Roggen (last page) from the book for our Real Ale festival last Saturday night and they drained the keg in 2 hours flat. I've also brewed the Brooklyn Chocolate Stout and the Chimay Grand Reserve (bottled). Both of which will be a year old come December. I understand your dilemma, I'm having a problem deciding what next to brew. Love that book.

How was that Chimay recipe? It's too cold for me to brew that now, but I'm thinking about next summer.

I made two great batches from that book with the Beamish Irish Stout receipe, and the Pride of Romsey IPA, which I am in the process of finishing up now. There's a lot of other recipes in that book I'm anxious to try.:)

I brewed that one on 12/07/03 and have been patiently waiting its inaugural tasting at our club Christmas party.

I brewed my Charon Chimay Bleu clone last Nov '03! I'll be tapping it again at Yule, but when I tasted it in July, the 9.7 % abv alcohol bite was almost gone. Very complex, (all who have tasted it agree that mine is better than the Bleu!!) I'm glad I have several of the Chimay glasses to use for this beer.
I brewed a Dubbel that's 8% and it'll be ready at Yule also. The Triple Moon Tripel is 12.75%!! I'll sample some at Yule, but that one will have to condition until Yule 2005!

i don't think i have the patience YET to brew a chimay clone, but it's definitely on my list and so is the tripel karmeliet (so dang tasty). but i think i've finally decided to try the sierra nevada celebration ale clone. i've been drinking the stuff a lot lately, so i think it would be fun to clone. anybody try this recipe before? i'm just slightly worried about the dry hopping, but i'm sure there's enough info on this board to help.

BluesHarp, the book contains brewing methods for all-grain, extract and partial mash for all brews.:)

Ill be joining that x-mas wish list..Im in an eternal limbo between partial mash and AG and it sounds like this book is right up my alley! a definate stocking stuffer for me! I finally finished my keg setup and my 3 tier Herms is underway I could sure use the recipes as a good starting point to inaugurate my system...Im still ordering pre milled grain , havent invested in a mill yet, but 1 thing at a time right?

My Kolsch is in the primary right now... 7% abv...
