Does anyone know if there's a Brew On Premises location anywhere in Colorado? There used to be one in Ft. Collins, but they went by the wayside about 4 years ago...

Cool! This place looks really good. Had you heard about it much before? I'm thinking I might go over there and brew a batch to "get my feet wet" again before I go off and do this for myself. Better yet, I'll do one with them AND do one on my own so I'm well practiced up. Anyone out there ever done a BOP before?

I haven't really heard much about it. I did go to the one here a few times before they closed. I think that may have been under the same name, but it's been too long for me to remember for sure.
When I went to the one in FC, it was very cool. All the fun of brewing, none of the cleaning! The batches they make are pretty big (about a keg worth). We would go with a big group of people brew a few different batches and split up a ton of beer.
When we went, we would always pick out a recipe from the ones they had on hand (they had about a hundred - the Boulder one lists some recipes on their site). I don't know how flexible they would be about different recipes or ingredients.

You're talking about the one over by Sutherlands, aren't you? Yeah, I brewed a batch there once as well -- they let me add pureed plums to the fermentor from my backyard. Plum Porter turns out pretty darn good, and nice and tasty for the holidays! :D
