Attention tasters: Just perusing Jackson's New World Guide and he says that this beer should be laid down and served at 64° F! Mine may be too cold at tasting time...

Yikes! I took mine out at 3:45! ditto on the too-coldness.

Maybe we should add these kind of notes in the schedule thread once the beer's been decided.

OK... did anyone save this one? I was unable to attend at the last minute -- boy, things sure got hectic fast around here, but I gotta say it's nice to be working again! Hoping to read the chat while I sup my Chimay tomorrow night....

Well...a few attendees said they'd try, I opted not to because no one has found a way to adapt my Mac files yet.

Sorry you couldn't be there Fret - it was great to taste something I haven't in a long while, the Chimay Blue was terrific (no matter what Chaz tells you!). ;)

I drank my bottle. Again, I enjoyed the tasting but this is not a beer that I would regularly frequent. It is a nice sipping beer for a cold evening by the fire.

I was surprised how much I enjoyed this beer. Ahhh, the wonderful world of beer variety!

I crashed trying to save it. I'm on a Mac, too, but there's an option to save it as html. (...and then -- Ba-Boom! -- restart.:(

ive got a copy of the chat. ive attached a text version. i want to get the html version to staronstage to post on the website he set up. so look at the boring text version below, and i can email the colored html version to anyone who wants it.

i had a lot of fun at this tasting! cant wait to do it again

Thanks for saving and posting the chat! Gotta ask, though... what FONT is that? Jeez, it's like my 6-year-old niece gave someone a copy of her homework and they lifted off the most legible version of each letter to make a font! (Can you do that? Not a bad idea, really...)

I'll lift it and paste it into MS Word later in a more eye-friendly font, and let it get nice and cold outside before I pop the top on this one. Cool! :cool:

realbeer wont let me post anything other than a .txt file, so it's whatever default text is (prolly courier). Like i said, i can email it to whomever, and when star gets back to me we can post the html version with the nice easy to read colors online.

No - this really looks like chicken scratch. Maybe it's just on MY computer - I wouldn't put it past a Dell to change whatever settings it wants to at any given point. Besides, it's 3 years old -- WAAAAAAAAY past its prime.... :rolleyes:

well, i'm bummed that i missed the tasting...otoh, as promised, i was enjoying some nice beer in vail with a very gorgeous lady :) saddly, the hot tub was not accessible -- but the trip was a whole lot of fun!

interesting read, wish CB and i could have attended.

i found the various notes on the nose interesting as i've always had either a raisin or plum nose without much spice from this beer and a nice silky-caramely mouth feel -- except in pubs (every single time i've had this in a pub it's always swillsnerâ„¢ temperature -- i mean c'mon, you're going to the expense of having this beer on draw, at least serve it close to ideal temp!).

i tend to refrigerate it, and then let it rise to room temp when drinking it . i don't know why i refrigerate it first, may as well pull it straight from the cellar and go ;) definitely a warm beer on the palate (good alcohol bite to accompany the flavors).

while maybe not the best of breed in terms of dubbels, i think it's quite representative of the style and a very good introductory beer to the world of trappist ales...just my $2*E-02, YMMV. a lot of interesting food pairings with it, too (like, say, thanksgiving turkey or gruyere cheese or even godiva chocolates -- have not tried the last one, just sprung to mind).

may have to pull the 2002 vintage out while CB is here and taste test (and test the godiva theory). thinking about getting a rack of bombers and crating them for 5 years. definitely a good beer to cellar.

Just for clarification, you know that it was the Blue/Grande Reserve we tasted? Which is a Belgian Strong Dark Ale. The Red/Premiere being the Dubbel of the Chimay line up. I only ask because you mentioned Dubbel in another post about this tasting...
