View Full Version : When to transfer from primary to secondary fermenter?

I just bought a kit that has a 6 gallon bucket and 5 gallon glass carboy. I would assume I pitch the yeast in the cooled wort in the 5 gallon bucket. How long do I wait until I transfer it to the 5 gallon carboy for complete fermentation? The instructions make it sound like I wait a while until I transfer it to the carboy.
basically, you would like at least 80% of your attenuation from your yeast to be complete...that said, i tend to wait until there's one "burp" per minute from the airlock or a week, whichever comes first. the big thing is to get the beer off of the trub so you don't get off flavors.

Expect to wait at least 1 week. Probably 10-14 days.
Do not rush it. People have been making beer for centuries.
The yeast don't care who you are -- you will not be able to make them make beer any faster.
The best defense against trying to rush a batch is to make another batch, then another.

Then there are those of us on the 1-2-3 schedule. 1 week in primary, 2 weeks in secondary, and 3 weeks to carbonate. Although I have been trying to increase my secondary time to 3-4 weeks, I still only leave the beer in the primary vessel for one week.
