Good Christ, man! That's a s**tload of hops! But, damn, if that isn't gonna be tasty! Perhaps we can work out a trade of some kind when it's done?

My hop measurements were just a tad off so I wound up short of horizon for the 18 minute addition so I added about .25 oz of Mt Hood.

If it turns out I'll be up for trading some - 'specially if I can get some of your world famous ESB, Stod!

Did you select this yeast because of it's high alcohol tolerance?

I chose 1968 because of the alcohol tolerance and the ester production. I think that some ester fruitiness will really add to the complexity and compliment the high alcohol content of the beer. It should wind up somewhere between an IIPA and an English Barleywine(leaning towards the IIPA) - at least that's what I'm shooting for.

I'm getting ready to do a similar batch next week. Hypothetically, what would happen if I used only cascade hops, on a similar schedule? Desirable, undesirable?

World famous, WOW! I don't know if I'd go that far! :D

But, I have no doubt, we could certainly work something out!

Bruno_78 - I wouldn't do the cascade thing but that's just me. I was trying for something that has some depth of hops and malt. Not something where someone could just pick out the one hop flavor/aroma.

So anyway - I just put this to bed. Stupid me - I missed my volume by .5 gallon so we have 6 gallons of 1.085(I would've been a point or two high @ 5.5 gallons). Evap rate was off today. Oh well - I guess I'll live with it.

OK after vacation this was waiting for racking to secondary and hopping. The hop flavor to it is at this moment is very good. It still has that hot hop flavor but my thoughts are that it will turn out well. FG around 1.016 - close to what I was hoping for.

Too my tongue - this recipes makes a beer that is nearly indistinguishable from 90 IPA. I highly recommend.

Stod - check your PM.

As the taste of this continues to clear up I am given reason to think that I should reduce the Special B to .25 lbs. It's just a little to raisiny.

why not tweek it with a small does of boiled water and a high does of DME to correct the gravity?

That's always an option but it's one I rarely use. DME is expensive and I should do a better job.

As the taste of this continues to clear up it is just too damn raisiny. Definitely cut the Special B - maybe out completely. The raisin flavor will mellow out so I'll wait on it.
