View Full Version : Grimbergen.. Trappist brewing
Hi All,
Well first of let me say that ive just come back home from over in France where i managed to taste one of my first Belgian beers. It happened to be Grimbergen!!
Well i havent tasted anything so beautiful in all my life!!
Now my question is.. Does anyone know of a recipe that could replicate.. Or at least taste similiar to this?

Don't know, what's it taste like?
I made a Belgian Dubbel, it's one of the most intense beers I have made yet.
It's fruity, super smooth, light brown/orange in color with a suspended haze that just hangs there.
It goes down really easy and now that it has aged for a month or so, is just getting smoother.
The catch is that it's also one of the strongest beers I have made and you don't feel it sneaking up on you until it's way too late...
Your first clue is when your ears start to get warm after a few swallows....if you choose to ignore that warning, then watch out!

That beer Dubbel sounds excellent Paul. Do you have a recipe handy? I think I responded to a different thread in which you mentioned another interesting sounding beer. Any other recipes for interesting, high ABV beers you might have would also be much appreciated. Have you done anything with meads?

The Dubbel was a standard Belgian Trappist Ale kit from Northernbrewer.com It was a very "beefy" beer, about 8 pounds of fermentable malts plus a pound of Belgian candi sugar.
I recommend it, it's quite an experience and a fantastic beer.

Ah, yes...Grimbergen!
A friend of mine was there on business, and brought me back a nice wooden box containing two bottles - a blond (6.7%ABV) and a dubbel (6.5%ABV), and a pair of wonderful glasses to match.

hey Paul, was that the NB dubbel, or the golden kit you did? I have a golden sitting right here (reaches to left and pats a corny) in secondary...
I know nobody asked, but I love Belgian beers. I have a real weakness for the blondes, my favorite beer of all time is Delirium Tremens... After that, I also love Chimay blue, Leffe blonde, and I'm also pretty impressed by one of our domestic versions, Ommegang...

It was the standard Norhtern Brewer Dubbel, I had no experience with any of them, so I just punted and went with a kit that looked good.
It's a very strong beer (to me) and very good. It's reserved for Friday and Saturday nights...no Dubbels on worknights!!
