I have in bottles a red that I hopped with "wilimete". well I could not wait 3+ weeks and last night I had to open one (2 week mark) and the beer was quite clear and dark red with a nice foam,well carbonated but tasted too "over hopped" and kind of had a "soapy" after taste.

is this just too early to open?
will the hops taste settle more over time?
and where did the soap taste come from?

Over-hopped? No such thing!

Need more data on your recipe and brewing process. Amount of hops, boil time, amount extract etc...

By over-hopped you mean too bitter? Hop bitterness does seem to mellow out a bit over time in my experience, but not much.
Carbonation sounds good after 2 weeks, so not too early to drink.

Soapiness is sometimes caused by low oxygen content in your wort at yeast pitching. You've got to really aerate your wort so the yeast can do it's thang.

Or, it could just be... soap...

Give the beer time, it'll mellow out.

It was an Edme Red Ale kit. I had the hop pellets in for 30 min (unfortunately I do not have the amount of hops I used right now) I do remember that I forgot to shake the primary before pitching the yeast.

Relax....Yer crackin it too soon. Patience my man. Remember the secret to (brewing ) Life: 7-10 days primary/2 weeks (minimum) secondary- 6 weeks ideal-1 month in the bottle. "Soap" mouth feel is hops that Haven't "mellowed". Particularly if you have added hops in the last 5-10 minutes of boil or Dry hopped in secondary...... Leave it alone-brew another batch.....
