I was a homebrewer who went pro. All I had to do was ask the head brewer for a job. I was taking courses at the community college and planned on attending UC Davis's brew program. I went and talked to a bunch of brewers about schools and what I should do to pursue a career in brewing. One of the brewers offered me a job in the cellar which I gladly took.
I filled kegs, washed fermenters, transfered beers from fermenter to conditioning vessel and worked with the best group of people ever. There was a change in management and since I was still taking classes at the college in Bio the lab tech moved me into his spot. Then I started doing yeast cell counts, cell viabilities, collected yeast for the days brews, tested the beer for microbials, and all that fun stuff. All the while assisting in the cellar and helping out the brewer, who told me I was basically a brewer with all the work that I did.
I ended up leaving the position as did all my co-workers when management started moving the brewery to a new location. I will eventually find a new brewing job, but I think to make a proper wage brewing school will come first.
That was the best job I ever had, but it has its ups and downs. It has to be a work of passion to help compinsate for long hours and low wages. If you really love brewing and don't mind that you will probably never get rich doing it start talking to your local brewers about how they got where they are at.
Good luck,
Billy
P.S. Sorry if it is a long ramble, I just worked through a half pot of coffee.
