I recently converted a chest freezer to hold my carny kegs. When I did this, I also started to stick back some special beer. I keep my cooler at 43 F. Would that be ok?

Remember, if you are cellaring Real Ale in cask you want it to continue working so it can't be too cold or the yeast will give up. Similarly, it can't be too warm otherwise the beer will ferment out too quickly and also be too warm for proper enjoyment.
Around 50 would be my suggestion although it's not too critical. If it's bottled beer, of course, it doesn't matter so much since it won't deteriorate in the same way - although obviously you'll want to make sure that the serving temperature suits you.
