View Full Version : Citrus wheat question.

I currently have a batch of basic wheat in it’s primary. I plan to rack it off into a secondary today but for an experiment, I want to rack off into a 1 gallon jug along with some Ruby Red Grapefruit juice just to see what the end result will taste like. Yeah, it might be bitter but I'm a big fan of Rubys.
My question is, just how much juice (juice + beer = 1 gallon) should I use? I don’t have the time or experience to pasteurize a Ruby Red Grapefruit puree, that is the reason for using a store bought pasteurized juice. Any ideas?

Dont bother to pasteurize a Ruby Red Grapefruit puree, Pour in a shot a Vodka or 4 and soak in the freezer for a week. If it freezes add more vodka. pitch into thew beer during secondary as the grapefruit will contain fermentable sugars.

make sure the juice does not contain preservitives as the will prevent fermentation.

As for the mix, the best way to find what you want is to mix finished beer with the juice and find what flavor level you want. remember the finished product will not have the same sweetness.

I tossed in some pasturized juice into the secondary and I'll see what happens by Friday night when I bottle. I'm not planning on any sweetness just flavor and hopefully little or less bittering.
