I've read that adding the corn sugar to your beer may cause a cidery taste. If I'm using a standard malt extract beer kit, and don't add the sugar (except for carbination before bottling), will this not lower the alcohol level, and totally change the taste of the beer???? what alternatives are there aside from usuing a second can of malt? Any suggestions would help, thanks.

pick up some DME (dried malt extract) in place of corn sugar. And I'd look for a different place to get kits, if corn sugar is a main ingredient. The only time I've ever added sugar to the boil was a 1.08 OG Belgian Strong Ale, had 2 lbs of belgian Candi sugar in it.
removing the sugar from a recipe will indeed lower the alcohol content. And yes, it will change the taste of your beer, for the better....

avoid corn sugar... its not real beer if it is made with lots of corn sugar (belgians excepted of course).
DME is a good idea...
in general i shoot for about 7 pounds of DME per batch, plus a specialty grain or two....
this gives me beer with a goodly alcohol content without being too sweet or malty.

I agree with Yamaha....Use corn sugar to prime not to brew..........Good Luck.....Blev
